At Biomar, we provide top-level biotechnology for wine producers: through the development of bacteria, we have developed processes for the creation of startersfor wine production tailored to each customer. These starters optimize the process and allow the oenologist to have control over it.

Goal:
Isolation and identification of Oenococcus oeni.

Development:
We proceeded to isolate and characterize the micro-organism from the fermentation tanks. Next, we evaluated, by means of comparative tests, its superior quality compared to commercial starters.

Results:
We are currently conducting the comparative studies and will proceed to its marketing in 2012.

Biomar’s first collaboration in this field has been with the Abadía de Retuerta winery.
